chore: update docker image links

In pact-foundation/pact-reference#507 and pact-foundation/pact-core-mock-server#11 the pact verifier and mock servers were changed to publish to updated docker image names.

Is it right to believe these links want updating? @YOU54F

Not sure this is the right place the discuss. But also, there is also a small readme on the old images on dockerhub (https://hub.docker.com/r/pactfoundation/pact-ref-verifier) and none on the new one (https://hub.docker.com/r/pactfoundation/pact-verifier).

It might be worth updating the readme to tell users the old one is deprecated and that they should look at the new one? And add a readme to the new one to make it look more appealing?
Afraid I have no experience with publishing to dockerhub, so cannot help/contribute here.

(I guess the same applies to https://hub.docker.com/r/pactfoundation/pact-cli vs https://hub.docker.com/r/pactfoundation/pact if you are trying to migrate people to the Rust implementation 🙂 )
