docs: refresh the demo GIF and rename simple.gif to demo.gif - #1141

Re-record the README and docs demo with the sync-scroll jump fixed, rename simple.gif to demo.gif, and drop the now-unused simple.png. Re-encoded lighter (1000px/10fps for the README, 800px for the docs) so each GIF stays around 1-2 MB instead of 6 MB. Co-Authored-By: Claude Opus 4.8 <noreply@anthropic.com>
