Improvments on docker-compose yaml file

the idea of the PR is:

1. add healthchecks for all the services
2. rename service from Geonode to nginx, it was misleading
3. improve the tasks.py to speedup the process and hide the environment variable from the "docker logs"
4. move from requirements.txt to project.toml
5. align .env.sample to new variables in GN core
6. tried to improve the dockerifle to speedup a bit the build
7. reduce number of migrations for the _data db
