Remove duplicate aliases that conflict with old operate/viam-server page

The old operate/reference/viam-server/_index.md still exists on main and
claims its own canonical URL plus aliases for /architecture/*, /internals/*,
/product-overviews/*, /build/program/*. My new page cannot also claim those
until the old operate/ directory is deleted.

Stripped down to only the aliases that were previously on reference/_index.md
and have no conflict: /reference/platform/viam-server/*, /installation/*,
/dev/reference/glossary/viam-server/.
