Family recipe from my friend Adam Wagner.
- 3 tbsp butter
- 2 tbsp Mexican-style chili powder
- 1 clove garlic, minced
- 5 tbsp flour
- ~3 cups water
- pinch of salt
- cooked, shredded chicken
- ground beef
- spinach and black beans
- 5 inch corn tortillas
- cheese
- In a large skillet, melt butter.
- Add chili powder, garlic, and flour. Mix until no clumps.
- Add water and salt, simmer until sauce thickens.
- Consider making a double batch - the sauce is that good.
- Layer tortillas, filling, and sauce in a baking dish (or roll individually).
- Bake covered at 325°F for about 20 minutes, until heated through.
- Uncover, top with cheese, and return to oven until melted. Can use broiler, but watch carefully to avoid burning.
