Wags Enchiladas

Family recipe from my friend Adam Wagner.

Ingredients

Sauce

  • 3 tbsp butter
  • 2 tbsp Mexican-style chili powder
  • 1 clove garlic, minced
  • 5 tbsp flour
  • ~3 cups water
  • pinch of salt

Filling (choose one)

  • cooked, shredded chicken
  • ground beef
  • spinach and black beans

Assembly

  • 5 inch corn tortillas
  • cheese

Directions

Sauce

  1. In a large skillet, melt butter.
  2. Add chili powder, garlic, and flour. Mix until no clumps.
  3. Add water and salt, simmer until sauce thickens.
  4. Consider making a double batch - the sauce is that good.

Assembly

  1. Layer tortillas, filling, and sauce in a baking dish (or roll individually).
  2. Bake covered at 325°F for about 20 minutes, until heated through.
  3. Uncover, top with cheese, and return to oven until melted. Can use broiler, but watch carefully to avoid burning.
