v6.0.1: SX126x bug fixes and documentation improvements

This release fixes two bugs in the SX126x radio driver and includes documentation and CI improvements. It is a recommended update for all SX1261/SX1262 users.

What's Changed

• Fix loop overflow in SX126x writeBuffer (Loop overflow in radio_sx126x.c:writeBuffer.c #1041). Thanks to @Maddocrus for reporting (AES encryption skipped for payloads > 127 bytes when USE_ORIGINAL_AES is defined #1013).
• Fix buffer read overrun in SX126x radio driver (Wrong parameters writing address in sx126x writeBuffer #1040).
• Replace defunct forum.mcci.io links with GitHub Discussions (Replace defunct forum.mcci.io links with GitHub Discussions #1035).
• Install latest Doxygen 1.x in CI instead of distro package (Doxygen CI uses outdated version, doesn't render markdown headings correctly #1033).
• Fix Doxygen rendering of RadioDriver.md (Doxygen: some markdown not rendered correctly (backticks in RadioDriver.md) #1029).
