Building olena fails for macOS

Based on https://github.com/stweil/ocrd_olena/tree/macos, the latest code fails like older versions with compiler errors, see build.log.

Undefined symbols for architecture arm64:

Likely an issue with outdated Makefile.am or configure.ac – please have a look at upstreams:

• https://github.com/glazzara/olena
• https://gitlab.lre.epita.fr/olena/olena

Since we already had to give up on arm64 for our Docker base images, it's unlikely we will invest further in non-x86 ATM.

Those upstream links show that Olena was not updated for years. I don't think that it can be maintained for OCR-D.

The compiler errors might be caused by the very recent clang compiler which does not like the old Olena code.
